ou can’t buy this from the store 👏🏻 I’ve never seen sourdough noodles for sale! 15 minutes of hands-on time and you have HEALTHY gut-friendly, chewy, tangy sourdough noodles that taste like a trip to Italy! 🍝✨ Wholesome ingredients - Flour, eggs, and your sourdough starter—that’s it.Mix - Let your stand mixer do the work or mix them by hand and enjoy playing with adult play-dough ☺️Roll it out— use a pasta roller or just a knife on the counter. No fancy setup required, just real food, made simple.This dough is gold. It’s versatile. Use this same recipe for spaghetti noodles, stuffed ravioli or even lasagna!Fermentation - let the sourdough work its magic—long ferment overnight in the fridge for that deep tangy flavor (and gut-loving benefits), or dry for an hour and have dinner ready ASAP. Add all of the ingredients to a stand mixer bowl. Mix with the dough hook until it’s a play-dough consistency, about 5 minutes on speed 2.
Place the dough into a container with a lid. Refrigerate overnight. Note: If making pasta the same day, put the dough in a covered container and leave it on the counter to sit for at least 2 hours.
Note: I’ve left my dough in the fridge, sealed in a container, for 4 days before and it still turned out amazing!
Cut the dough into 6-8 equal pieces. Roll into balls. Roll out into 1/4” thick rectangles.
Flour the dough VERY well. Send through widest setting on pasta roller. Then send through middle setting on pasta roller. (You pick the desired thinness of noodle you want.)
Note: flour noodles on both sides before rolling out with pasta roller. This will prevent sticky noodles. 💕
Hang the noodles on hangers or a pasta rack if you have one. Let them dry for at least 1 hour before using. (The more time the merrier. I like letting them sit all day for extra chewiness but 1 hour still makes noodles better than the store)
Note: noodles should be stored in the fridge once fully dried. They’re good to be refrigerated for 2-3 days before cooking them.
Drop noodles into boiling water and boil for 3-5 minutes until al dente. You’ll know they’re done by the feel but also when the noodles are no longer a bright white color.
