Sourdough Pizza Dough

I created this recipe for busy families who want that Neapolitan-style pizza without the cost, the fuss, or the extra gadgets. All it takes is a few minutes of mixing and a long dough rise overnight while you sleep.
The EASIEST pizza dough recipe ever.It tastes like you spent hours perfecting it… but we both know it only took minutes! Crispy, chewy, golden perfection straight from your own oven — the kind of recipe that makes homemade pizza night feel extra special without extra work.
Ingredients
- For the sauce:
- •fresh basil
- •canned tomatoes I used half of a 28oz jar
- •1 tsp coarse kosher salt
- •ground black pepper
- For the dough:
- Mix the Discard: 9:30-10:00pm mix.
- 210 g water
- 470 g flour
- 100 g discard
- 30 g honey
- 10 g salt
- 40 g oil
- *corn meal for wooden pizza peel to prevent sticking
- *sliced mozzarella cheese
- *grated Parmesan cheese
- * fresh basil for topping
Instructions

At bedtime, around 9:30 – Add all dough ingredients to stand mixer bowl.

Mix for 8 min – speed 2

Cover + bulk ferment on counter overnight.

When you wake up at 6, 8 or even 10am (it doesn’t matter. I’ve tried all these times.) it will have had enough time to double. Divide the dough into 2 or 4 dough balls.

Grease a baking tray and spray the dough balls with oil. Cover with plastic wrap and let them rise a bit. Once the dough balls look larger in size but not quite doubled, they’re fine to bake! Don’t let them go past doubling in size. (Throw them back into the fridge if they’re rising too quick before dinner time)

When ready to bake:

Preheat the oven to 450. Add your pizza steel to the oven so it can preheat as well. *note: Make sure to use a pizza steel (of course a stone will work but the steel will give the best results).

Cover a wooden pizza paddle with corn meal.

Put a ball of dough on the pizza paddle smack in the middle of the corn meal. Press the center of the ball to start shaping the pizza. DO NOT, at any point, press down the edges of the dough. (this prevents deflating the crust)

Mix sauce: canned tomatoes + salt + pepper + fresh basil

Top dough with some tomato sauce, mozzarella pieces, and grated Parmesan cheese.

Bake on preheated PIZZA STEEL at 450° for 14 minutes. (Internal temp of pizza should reach 200 degrees minimum)

Use a metal pizza peel to remove pizza from oven.

Top baked pizza with more fresh basil.
