Quick Sourdough Hot dog & Hamburger Dough

Ingredients
Yeast Mixture:
- 250 g warm buttermilk
- 50 g warm water
- 55 g sugar
- 10 g yeast
Dough Mixture:
- 600 g flour
- 25 g corn starch
- 200 g discard
- 1 egg
- 60 g salted butter melted
- 12 g coarse kosher salt
Hamburger Toppings BEFORE baking:
- 1 egg
- 1 Tbsp water
- Sprinkle of sesame seeds
Hot Dog Bun Topping AFTER baking:
- 2 Tbsp melted butter
Instructions
- In the stand mixer bowl, add the yeast mixture and let sit for 5 minutes.
- After the yeast has bloomed, add in the other ingredients and let mix for 5 min on speed 2. Take time to scrape down the sides and dough hook if the dough rises up or sticks to the sides. This dough should feel tacky and even a bit sticky, don’t worry about it!
- Oil your hands, pull the dough out of the stand mixer bowl and put the dough into a bowl with a lid. Let it sit covered until it doubles in size. This usually takes 1-2 hours.
- After the dough doubles in size, roll the dough out into a circle, about 1” thick. Divide the dough into 12 pieces.
- For hot dogs: Roll into logs. For hamburger buns: roll into small rolls and then gently press them down.
- Cover and let them rise, about an hour, until doubled in size.
- For hamburger buns: Brush with egg wash, mixed with 1 Tbsp of water. Sprinkle some sesame seeds over the tops of the buns if you like sesame burgers.
- For hot dogs: Bake at 350 for 10-13 minutes, until the tops are golden and the internal temp is 205. For hamburger buns: Bake at 375 for 12-15 minutes, until golden and internal temp is 205.
- Immediately brush hotdog buns with butter once you pull them out of the oven. This will soften the crust perfectly for that classic hot dog bun texture. You don't have to do anything to the hamburger buns.
- Let the buns cool on a wire rack until you’re ready to use them!

Note: once completely cool, store in a sealed container for up to 4-5 days.
Note: these can also be made by hand, just increase the kneading time!
